Cassava Flour Squash Blossom Quesadilla 

Yield: Feed 2 people Prep time: 15min Total time: 30min 

INGREDIENTS 

Cassava Flour Tortilla | 4 Vegan Cheese | 1 Cup Squash Blossoms | 1 1⁄2 Cup Coconut Oil | 2 Tbsp. 

DIRECTIONS 

  • Place Large Pan on Stove. 
  • Turn stove onto medium flame. Add coconut oil to pan, melt and coat entire pan on oil. 
  • Add one tortilla and add squash blossoms and one part cheese. Melt and fold in half. Flip quesadilla and continue to cook. Cook for 2-3min per side. 
  • Once done cooking transfer to plate. 
  • Enjoy.
