Organic Bacon Wrapped Jalapeno Poppers
Who says a crowd-pleasing treat like a bacon-wrapped jalapeno popper can’t be healthy? By using the best quality organic ingredients and baking instead of frying, this delicious appetizer can be better for you without sacrificing flavor.
12 organic jalapeno peppers, halved lengthwise with seeds and membranes removed (optional)
12 slices bacon (nitrate-free)
1/2 cup organic cream cheese (room temperature)
1/2 cup organic shredded cheddar cheese
Organic produce is an important choice, especially in this recipe where you will be eating the skin of the pepper. Removing the seeds and membranes of the peppers is optional and it depends on the spice preference of you and your guests. All the heat lives in the seeds and membranes, so totally remove them for a milder spice or leave them in for more of a spicy kick. When choosing bacon, look for one without nitrates and a center cut variety, which usually has less fat.
Instructions: Preheat oven to 400 degrees. Wash peppers, then cut each pepper in half lengthwise and remove seeds and membranes if you choose to. Mix the cream cheese and cheddar cheese in a bowl until combined. Fill each pepper half with the cheese mixture. Put the halves of the peppers back together and wrap each with a slice of bacon. Arrange on a baking sheet lined with aluminum foil (easy cleanup) and bake for 15-20 minutes until bacon is crispy. Serve hot or at room temperature. Enjoy!
