Conventionally-grown produce is fertilized with synthetic chemical fertilizers, while weeds and pests are controlled with chemical products. These chemicals have a drastic impact on the environment and can be harmful when ingested by people.

The Southwest Scramble

All ingredients used for this recipe should be fresh, locally-grown where possible and organic. Organic products are now widely available in large supermarkets. Just check the labels or stick to the organic section in the produce department.

Ingredients

  • 8 large eggs, well-beaten
  • 2 medium or 3 small corn tortillas, cut into thin strips
  • 2/3 cup evaporated milk
  • 1 cup (4 ounces) shredded Mexican-blend cheese, divided (half Cheddar, half Monterey jack)
  • 1/8 teaspoon ground black pepper
  • Nonstick cooking spray
  • 2 tablespoons diced green chilies
  • Mild salsa, chopped avocado and sliced green onions

Cooking Instructions

  1. Combine eggs, evaporated milk, half the cheese, chilies and black pepper in medium bowl.
  2. Spray a large skillet with nonstick cooking spray
  3. Put the tortilla strips in the skillet, set for medium heat and stir the tortillas periodically.
  4. When the strips are browned to taste, pour in the egg mixture.
  5. Stir frequently until the eggs are cooked thoroughly. Sprinkle with remaining 1/2 cup cheese.
  6. Top with salsa, avocado and green onions.
  7. Serve with whole-grain toast and fresh organic fruit.
